Por cierto, no necesitas unirte a user_profile.
Si tienes dates
tabla con las fechas relevantes, esto es bastante fácil:
SELECT dates.day AS `Date`, COUNT(DISTINCT ts.user_id) AS user_count

LEFT OUTER JOIN tracked_search AS ts

GROUP BY dates.day;
Ya que probablemente no tengas dates
y es posible que no quiera crear y mantener una, puede usar una de las soluciones para generar la lista de fechas sobre la marcha. p.ej. Obtener una lista de fechas entre dos fechas o Cómo obtener una lista de fechas entre dos fechas en mysql select query
